Roy has been involved in the seafood industry since 1972; he has travelled extensively and is experienced in all post-harvest activities with training qualifications and has regular consultant activities especially in the important value supply chain.
Roy is a believer in continuous improvement and in collaboration and always striving for innovative ways to improve the important seafood industry. He has taken a lead role in new ventures such as the Association of International Seafood Professionals and he combines that with the lead role with Aquaculture without Frontiers, which is simply fantastic work done by many volunteers who share their skills, knowledge and time to improve conditions for the poor who are struggling with hunger and malnutrition.
One his major aims is to help raise the profile and consumption of seafood and he engages that in many ways including being involved with Global Initiative of Life & Leadership through Seafood (GILLS), which connects with global researchers converting their science into relevant information which is then broadcast to politicians, media and consumers.
If passion was music, then it has been said that Roy would be a brass band because there are few better than he in raising the profile and consumption of seafood. He has recently been acknowledged by the Mexican Government as being a catalyst in their increase in seafood consumption (an increase of over 4 kgs per person per annum over 3-4 years). He has been appointed Honorary Professor for the Universidad Tecnológica del Mar de Tamaulipas primarily due to his continued work in Mexico and with his involvement with AwF in the state of Tamaulipas.
Honored this year by The World Gastronomy Institute as their first VIP to receive the WGI Medal of Honor he has worked as a consultant for both The World Bank (part of a successful plan for a project which has just been funded US$ 20 million) and UN’s Food & Agriculture Organisation (FAO) on developing a strategy for seafood consumption in Kingdom of Saudi Arabia.
Roy believes that aquaculture is the most important farming that the world does but that we all need to work diligently to ensure this is recognized globally.

Dr. Lee Chee Wee, an academia and technopreneur, has more than 25 years of dynamic, hand-on experience and networking in providing technological innovation and solutions to enterprises across the globe. He received his B.Sc. and M.Sc. from McGill University, Canada, and Ph.D. from the University of Alberta, Canada. He was a recipient of the Alberta Heritage Foundation Scholarship for Medical Research. Dr Lee had carried out his Post-doctoral Fellowship at Yale University School of Medicine, USA, before pursuing his academic career at the School of Medicine, National University of Singapore, where he is currently an Adjunct Associate Professor. He is a honoree of Singapore Spirit of Enterprise and a graduate of GMP Harvard Business School. He also serves as Scientific Advisor or Consultant to many life science companies and organizations.
Dr. Lee is the immediate Past-Director of the School of Applied Science at Temasek Polytechnic. Under his leadership, the School had developed many technology capabilities and provided valuable innovative solutions and technical supports to more than 150 companies. The School is also an APEC Centre (Policy Partnership on Food Security) for Sustainable Development in Agriculture and Fishery Sectors. Katherine has over 20 years’ experience at law and has appeared before the full bench of the High Court and is often asked to be a guest lecturer at Australian universities on topics such as International Fisheries Law and Tourism Law.
Her passion is the ‘blue economy’ where the growth of shipping and aquaculture business requires further regulation on how the ‘blue space’ will be utilised for future generations.
Katherine is currently the legal counsel for the Association of International Seafood Professionals and has held the position of Treasurer and Secretary of the World Aquaculture Society Asian Pacific Chapter Executive Committee (WAS APC). She is also involved in the development of Aquaculture without Frontiers charity.
As the ‘fish lawyer’ Katherine is in a unique position to use her knowledge and experience to assist in guiding the review of shipping and aquaculture regulation and the implementation of new technologies that can assist the reshaping and further development of the ‘blue economy’.
